Thai Rabbit (in a coconut honey lime sauce)

INGREDIENTS:

-2 rabbit loins (or chicken breasts)

-1/4 cup flour (to coat protein)

-1 TSP salt

-1/2 TSP EACH of ground ginger, garlic powder, ground coriander, turmeric powder, pepper

SAUCE:

-1 13.5oz can coconut milk

-1/4 cup Asian sweet chili sauce

-3-4 TBSP honey

-1/4 cup lime juice

-1 TBSP soy sauce

-1 TBSP Asian chili sauce

-1 TSP dried basil

DIRECTIONS:

-Mix dry ingredients then dredge rabbit loins and shake off excess. Sautee in butter or olive oil on both sides for about 5 minutes each side

-Remove loins from pan and set aside. Add oil/butter to pan as needed and lightly sautee 2 TSP freshly grated ginger and 4 minced garlic cloves along with white parts of 2 green onions

-Add sauce mixture into pan after 2-3 minutes and keep heat on medium simmer

-Use cornstarch as needed to help thicken and adjust ingredients to desired flavor profile

-Place rabbit loins into sauce and continue to simmer until meat is cooked completely through and sauce has thickened

-Serve over steamed rice and garnish with sliced green onions
